Ingredients

  • 90 g melted butter
  • 1 1/4 cup sugar
  • 2 juiced lemon
  • 3 beaten egg

Method

  • STEP 1 hand whisk together the butter, sugar and lemon juice in a microwave-safe bowl.
  • STEP 2 Add eggs and beat well together. In the upper microwave for 1 minute.
  • STEP 3 mixture whisk well then cook for another 3 minutes, stirring again after 2 minutes.
  • Step 4 whisk mixture and then let it cool.
  • STEP 5 Pour into sterilized jars.
  • STEP 6 in the fridge when cool.

Notes

After cooking in a microwave oven whip in the pulp of 1 or 2 passion fruit before pouring into jars . I often do with the fruit of the passion and love the taste.
