Ingredients

  • 3 cup grated mixed vegetables
  • 1 cup cheese
  • 3/4 cup milk
  • 1/2 cup self-raising flour
  • 2 slices of bacon
  • 4 egg

Method

  • STEP 1 beat eggs and milk together. Add the vegetables, cheese and flour and mix well.
  • STEP 2 Place in a greased lamington tin or tin.
  • STEP 3 Sprinkle with bacon (or ham) and a little 'pepper.
  • Step 4 Bake at 200 ° C for 30-35 minutes or until set and golden.
  • STEP 5 Serve hot or cold.

Notes

I did this with the left over roasted vegetables such as asparagus, zucchini, eggplant, pumpkin, potatoes, peppers and carrots. Just cut into bite size pieces. I also do this as muffins, so handy for the lunchbox.
