Ingredients

  • 800g beef cubes
  • 1 1/2 tablespoon ras el hanout
  • 2 tablespoons vegetable oil
  • 2 teaspoons butter
  • 600g sweet potato cut into pieces
  • 1 large onion, finely chopped
  • 3 crushed garlic clove
  • 400 g chopped tomato in box
  • 1/2 cup water
  • 1/4 cup honey
  • 1/4 cup raisins
  • 1 teaspoon of * chopped parsley to decorate
  • 1/4 cup dried apricots

Method

  • STEP 1 Sprinkle 1 tablespoon ras el hanout in a plastic bag, add the pieces of beef and massage so that the meat is coated evenly with the spice mixture.
  • STEP 2 Put sweet potato on the base of the slow cooker.
  • STEP 3 Heat butter and oil in a pan, cook the meat in batches until golden brown on all sides then remove from pan.
  • Step 4 Saute onion and garlic until golden brown and add to slow cooker with beef.
  • STEP 5 Add tomatoes, apricots, water and salt and pepper, then sprinkle with the remaining half tablespoon (or more) of Ras el Hanout, according to taste.
  • STEP 6 Cook top for 2 hours, then low for 3 hours, or until the meat is tender.
  • STEP 7 Add honey and raisins and cook for another 30 minutes.
  • STEP 8 To serve, garnish with cilantro or parsley.

Notes

A recipe for Ras el Hanout can be found on the best recipes (recipe # 2924). Coriander can replace the parsley.
