Ingredients

  • 3 cup self-raising flour sifted
  • 1 cup granulated sugar
  • 125g white chocolate chips
  • 125g melted butter
  • 1 egg
  • 1 cup milk
  • 1/2 cup cream
  • 1 teaspoon of vanilla essence
  • 200g frozen raspberries
  • 12 * fresh raspberries to decorate

Method

  • STEP 1 sift the flour, add the dry ingredients.
  • STEP 2 Melt butter, add all the ingredients, except the raspberries, and mix well.
  • STEP 3 Add frozen raspberries. Do not over mix. Mixture may be lumpy.
  • Step 4 Bake at 200 ° C for 22-25 minutes.

Notes

To make a nice case muffin, cut greaseproof paper in a larger square then the tin. Crush it with a cup or a glass that fits inside the muffin tray, so that takes the shape of the muffin tray.
