Ingredients

  • 6 cup grated mixed vegetables
  • 1/2 cup seeds chia
  • 1/3 cup flaxseed
  • 4 lightly beaten egg
  • 1/4 cup mixed fresh herbs
  • 1 1/2 cup grated cheese

Method

  • STEP 1 Preheat oven to 160C °. Line a 22 cm x 30cm casserole or baking sheet with parchment paper.
  • STEP 2 Mix all ingredients together in a large bowl - except grated cheese.
  • STEP 3 vegetable mixture place in the dish and top with grated cheese.
  • Step 4 Bake for 40 minutes.
  • STEP 5 cool slightly before cutting. I served this with a balsamic glaze and fresh tomato. (Optional).

Notes

This recipe was delicious served hot or cold. Leftovers make a great lunchbox filler. You can also add diced ham or bacon in the mixture (1/2 cup), if you want to add extra protein. You can use any grated mixed vegetables that you like - such as carrots, broccoli, cauliflower, zucchini, peppers, sweet potatoes, etc. You can exchange flaxseed for linseed. For the herbs you can use basil, thyme or parsley.
