Ingredients

  • 750g thin pork sausage
  • 1 finely chopped onion
  • 1 granny smith chopped apple
  • 2 teaspoons curry powder
  • 1 tablespoon
  • flour
  • 2 teaspoons brown sugar
  • 1 1/2 cup broth (liquid)
  • 2 teaspoons mango chutney
  • 2 teaspoons sultana
  • 1 teaspoon of apricot jam
  • 1 diced tomato
  • 1 tablespoon coconut
  • 1 cup milk
  • 1 teaspoon of * salt and pepper to taste

Method

  • STEP 1 boil gently for sausages about 15 minutes, then peel off the skin and cut in half.
  • STEP 2 In a frying pan, add a knob of butter and saute onion and apple for 10 minutes.
  • STEP 3 Add the curry powder, flour and brown sugar, and brown for 5 minutes.
  • Step 4 Add beef broth, chutney, raisins, apricot jam and salt and pepper.
  • STEP 5 Gradually add milk, tomatoes and coconut.
  • Step 6 Place sausages in curry mixture, simmer for 15 minutes, and serve with fresh beans and boiled rice.
