Ingredients

  • 250 g chopped pitted dates
  • 1 1/4 cup water
  • 90 g butter
  • 1/2 teaspoon bicarbonate of soda
  • 2 cup self-raising
  • flour
  • 1 1/2 teaspoon cinnamon powder
  • 1 / 2 cup coconut
  • 2 lightly beaten egg
  • 2 big ripe mashed bananas

Method

  • STEP 1 Place dates, water and butter in a skillet. Cook over medium heat, stirring occasionally, until the butter is melted. Remove from heat and cool slightly. Stir in baking soda.
  • STEP 2 Sift the flour and cinnamon in a bowl, add the coconut. Make a well in the center.
  • STEP 3 Add date mixture, eggs and bananas. Fold through dry ingredients until combined.
  • STEP 4 mixture spoon into a greased muffin pan. Bake at 180C oven for 25-30 minutes or until cooked when tested with a skewer.
  • STEP 5 scones stand in the pan for about 5 minutes before turning onto a wire rack to cool.

Notes

Make a healthier option using one cup of whole wheat flour and a cup of self-raising flour standards. Use butter or margarine.
