Ingredients

  • 300 g peeled sweet potatoes chopped
  • 1 cup cream
  • 250 g sultana
  • 3 cup self-raising flour
  • 250 g chopped butter
  • 1 1/2 cup caster sugar
  • 2 tablespoons honey
  • 4 egg
  • 1/2 cup icing sugar

Method

  • STEP 1 Grease a 25cm round cake pan .
  • STEP 2 Place sweet potato in a pan with a little 'of water.
  • STEP 3 Boil until tender, then drain and cool. sweet potato mash with custard.
  • Step 4 sultana coat with 1 tablespoon flour, and set aside.
