Ingredients

  • 125g butter
  • 3/4 cup granulated sugar
  • 1 teaspoon of vanilla essence
  • 1 egg
  • 2 mashed ripe banana
  • 1 1/2 cup self-raising flour
  • 1/4 cup milk

Method

  • STEP 1 Melt the butter, sugar and vanilla in a medium sized saucepan.
  • STEP 2 Remove from heat.
  • STEP 3 Add mashed bananas and stir until just blended.
  • Step 4 Add egg and mix well. Stir in flour, add milk and mix gently.
  • STEP 5 Bake at 170 ° C for about 40 minutes.

Notes

I adapted this from a recipe that calls for creaming butter and sugar together as I hate to do this. I remembered a recipe from years ago that melted these ingredients in a saucepan. It 'so easy and takes much less time.
