Ingredients

  • 1/4 cup milk
  • 250g mashed banana
  • 1 cup sugar
  • 2 cup self-raising flour
  • 2 large egg, lightly beaten
  • 60 g soft butter

Method

  • STEP 1 Place bananas in the bowl of electric mixer.
  • STEP 2 Add sugar, flour, eggs, butter and milk.
  • STEP 3 beat on low speed until combined, then beat on medium speed for 2 minutes.
  • Step 4 mixture turn into patty pans and bake at 180 ° C for 20-25 minutes or until cooked through.
  • STEP 5 cool for 10 minutes before turning out on a wire rack to finish cooling.

Notes

If you make a cake, place mixture into a greased loaf mold 23 cm x 12 cm, which has a base lined with greased parchment paper. Bake at 140C - 160C for about 1¾ hours or until cooked when tested. These can be frozen if you prefer.
