Ingredients

  • 1 cup self-raising flour
  • 1/2 cup granulated sugar
  • 1 teaspoon of lemon zest
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk

sauce

  • 1/3 cup granulated sugar
  • 1 teaspoon of lemon zest
  • 1 cup boiling water
  • 1/2 cup lemon juice

Method

  • STEP 1 Preheat oven to 180 ° C.
  • STEP 2 basic batter: Sift the flour and a pinch of salt.
  • STEP 3 Add sugar and lemon zest and mix well. Stir in the melted butter, vanilla and milk.
  • Step 4 Turn into a greased, ovenproof dish with deep sides.
  • STEP 5 Sauce: Sprinkle mixture with the sugar and the lemon zest.
  • STEP 6 Combine boiling water and lemon juice and carefully pour over the mixture in the pot.
  • STEP 7 Bake for 30-40 minutes.
  • STEP 8 rest for 5-10 minutes before serving.

Notes

I use a round cake pan as the pan. Pudding is lovely served with vanilla ice cream or cream.
